Ingredients

  • 2 cups cooked and shredded chicken

  • 1 can store-bought red enchilada sauce (10 oz)

  • 2 cups shredded Monterey Jack cheese

  • 8 flour tortillas

  • 1 tablespoon vegetable oil

  • 1 small onion, chopped

Preparation

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic, cumin, chili powder, salt, and pepper, stirring for another minute until fragrant.
  3. In a mixing bowl, combine the cooked shredded chicken with half of the enchilada sauce and half of the shredded Monterey Jack cheese. Stir until well mixed.
  4. Spread a thin layer of the remaining enchilada sauce on the bottom of a baking dish to prevent sticking.
  5. Take a flour tortilla, spoon a portion of the chicken mixture onto the center, roll it up tightly, and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  6. Once all enchiladas are in the dish, pour the rest of the enchilada sauce over the top, ensuring they are well coated. Sprinkle the remaining Monterey Jack cheese evenly on top.
  7. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with chopped cilantro, and serve hot with a dollop of sour cream on the side.

Notes

Opt for rotisserie chicken for a quick meal prep, and adjust the spice level of the enchilada sauce according to your taste. For added flavor, you can also mix some enchilada sauce into the chicken filling before assembling.
