The Magic Behind the Dish

The beauty of Stuffed Salmon With Spinach & Feta lies in its simplicity. Each salmon fillet is carefully slit to create a pocket, then generously filled with a rich mixture of sautéed spinach, crumbled feta, garlic, and herbs. Once baked or pan-seared, the salmon develops a golden crust while locking in moisture — creating a melt-in-your-mouth texture that pairs beautifully with the tangy, creamy filling.

The combination of omega-3-rich salmon and nutrient-dense spinach makes this meal a powerhouse of health benefits. The feta adds just the right amount of salty creaminess, while hints of paprika, lemon, and olive oil elevate the Mediterranean flair.

  • Cutting board

  • Spoon

  • Aluminum foil

Ingredients

  • 4 x 6-ounce pieces of salmon

  • 2 Tbsp olive oil (divided)

  • 3 cups baby spinach, packed

  • 1 tsp Italian seasoning

  • 1/2 tsp paprika (regular or smoked)

  • A pinch of cayenne pepper

  • Approx. 5.3 ounce block of feta cheese (Approx. 150 grams)

  • Salt + pepper, to taste

Instructions

1

Preparation

  1. Preheat your oven to 375°F (190°C). Line a baking dish with aluminum foil for easy cleanup.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the baby spinach and sauté until wilted, about 2-3 minutes.
  3. In a mixing bowl, combine the sautéed spinach, chopped roasted red peppers, crumbled feta cheese, grated parmesan, Italian seasoning, paprika, cayenne pepper, and a pinch of salt and pepper. Mix well to create the stuffing.
  4. Make a pocket in each salmon fillet by slicing it horizontally without cutting all the way through. Season the outside of each fillet with salt and pepper.
  5. Stuff each salmon pocket generously with the spinach-feta mixture, making sure to fill each one evenly.
  6. Heat the remaining olive oil in the skillet over medium-high heat. Sear the stuffed salmon fillets for 2-3 minutes on each side until lightly browned.
  7. Transfer the seared salmon to the prepared baking dish and bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
  8. Remove from the oven, let it rest for a few minutes, and serve warm, garnished with fresh herbs if desired.

Notes

For best results, ensure the salmon fillets are skinless. Adjust the seasoning according to your taste preference. If you prefer a healthier version, you can reduce the amount of feta and parmesan.
